Leafy Greens & Microwaves: What You Don’t Know Might Be the Problem

Let’s clear something up real quick microwaves aren’t the villain. They’re just misunderstood. The truth is, they get a bad wrap mostly because people microwave the wrong things.

Case in point? Leafy greens. If you’re saving celery, kale, or spinach for leftovers, don’t just toss them in the microwave and hit reheat. These greens are naturally packed with nitrates, which are super good for you until they get zapped the wrong way. When microwaved, those healthy nitrates can convert into something called nitrosamines (science-y word for compounds that may be carcinogenic). Yikes.

So yeah, the microwave didn’t cause the problem… but it definitely didn’t help.

✨ The fix? Reheat leafy greens in your oven or toaster oven instead. It takes a smidge longer, but it keeps the good stuff good and you safe.
